Weekly menu and birthday party
This past weekend it was my daughters birthday party. A very big happening in a little 6 year old girls world. She has been longing for this days for months. Of course we wanted to make a great day for her. I was in charge of the food preparations (surprice!!!!). The party was out in the woods so we needed something that was transportable and easy for the kids to eat.
I made sandwiches with whole wheat bread, turkey or cheese. Fruit skewers with grapes, pineapple and Cantaloupe melon. Instead of cake I made vanilla and chocolate cupcakes with cream cheese frosting dyed with some beet juice to make it pink. I used the same basic recipe for the cupcakes but I added 4 tablespoons of cocoa powder to the vanilla batter for the chocolate ones. The frosting recipe yields for a whopping 4 cups of sugar for one batch, I took half of it and it was still sweet. The beet juice I simply made by boiling 1 beet cut into pieces in some water until soft, pureed it and strained it so I only had juice left. I added some juice to the frosting. No flavor from the beet at all just the nice pink color. No need for red no 40.
Saturday night we we were at some friends house and I had promised to bring a dessert. Inspired by our Florida trip I made a key lime pie and served it with fresh strawberries. Summer feelings mmmmmm
