Another fruitful trip to the market
Yesterday I went to the Farmers market again, I simply can´t resist if I am at home on a Sunday. A few more weeks to squeeze out of the locally produced vegetables. It is actually nice because my children loves to come with me as well. While I wonder around looking at all the good and beautiful produce they try to pet every single dog that is there. They also like to bring their own wallets and insist on buying something with their own money and they usually ends up with a flavored honey stick. It is only my husband who doesn´t really enjoy going there but when he gets the vegetables prepared in healthy meals during the week then he appreciate it.
This week I got mustard greens, aubergine, green pepper, zucchini, butternut squash, broccoli, yellow beets and carrots.
Weekly menu
Monday: Kidney bean burger with ratatouille
Tuesday: Spinach and ricotta filled tortellini (ready made from the store)
Wednesday: Home made fish sticks, boiled potatoes, broccoli, yogurt/mayonnaise dip
Thursday: Puréed root vegetable soup with red lentils
Friday: Pasta with sauteed mushrooms, bacon and mustard greens, grated Parmesan cheese
Saturday: Creamed chicken curry, Basmati rice, broccoli or zucchini, chutney
Sunday: Swedish cabbage pudding (Kålpudding), boiled potatoes, Lingon berries
